As a natural process coffee, the cherries are dried wholean ancient method that predates other processing techniques. Rather than fermenting or washing the fruit away, the beans remain inside the whole cherry as it dries, allowing the sugars and fruit to deeply influence the flavor.

Consistently producing high-quality natural coffees is no easy feat. It requires careful, slow sun-dryingtypically 15 to 20 days in Myanmar, depending on altitudeon raised beds that promote airflow and allow for even drying through regular turning. The result is a vibrant, fruit-forward cup that reflects both tradition and meticulous craftsmanship.
